Cauliflower is indeed, a flower. It grows from a plant that, in its early stages, resembles broccoli, its closest relative. Like broccoli, cauliflower is a cruciferous vegetable and as such has all the usual healthy attributes and is an excellent source of vitamin C.
As it grows on a single stalk, the head (known as the “curd”) is surrounded by heavily ribbed green leaves that protect it from sunlight and keep the curd white. However those green leaves will eventually open and the cauliflower when hit by sunlight, changes colour from white to cream. Surprisingly these creamy coloured ones are often the best flavoured.
This vegetable is now enjoying a bit of a comeback in popularity as being low calorie it is used as a substitute for potatoes in some slimming diets, it can also be grated to replace rice and mashed to make a low carb pizza base!
