Makes 12 squares
- 2 medium sized bramley cooking apples, peeled and thinly sliced
- 8 oz caster sugar
- 6 oz plain flour
- 1 ½ heaped teaspoons baking soda
- ¾ cup chopped walnuts or pecans
- 3 teaspoons cinnamon (or more if you like)
- 2 eggs well beaten together
- 2 tsp vanilla essence
- 200ml corn or vegetable oil
Rub with oil or butter the surface of a deep non stick roasting tin or deep baking dish about 9inches x 13 inches. Preheat the oven 150C. Stir all the ingredients together in a bowl and spread into the roasting pan. Bake approximately 55 minutes at 150C. It will still feel slightly squidgy in the middle when you press your finger tips down lightly. Leave to cool before cutting into squares.
