Banana Jam
Banana (Single)

Makes 2 small pots

  • 5 Bananas
  • 1/2 lemon juice only
  • 1 Lime zest and juice
  • 1/2 teacup water
  • 300gms sugar (or 1/2 sugar and 1/2 SureSet sugar for jam)

Choose a wide saucepan. Slice the bananas thinly and coat quickly with the lemon juice to keep them white. Remove any black bits. Add the water, lime zest and juice. Simmer until the bananas have disintegrated almost completely. About 15 mins. stir in the sugar and keep stirring until dissolved. Simmer away boiling until setting point is reached.
